Vanillin occurs naturally in vanilla but is typically made from the wood pulp industry's waste. It produces a vanilla odor and flavor without the expense of using real vanilla pods. An Acceptable Daily Intake (ADI) of 10 mg/kg has been agreed between FAO/WHO and EU.
